Grandma's Casserole |
This is a great casserole for those days when you want everything in one pot! For those of you who follow Weight Watchers the exchanges have been provided.
Ingredients
- 2 teaspoons red. calorie margarine
- 1/2 c. chopped onion
- 1/2 c. chopped green pepper
- 10 oz. lean ground beef
- 1/4 teaspoon pepper
- garlic
- oregano
- 16 oz. can tomatoes
- 1/2 c. mushrooms
- 1 c. water
- 3 oz. part-skim mozzarella cheese
- 3 oz. uncooked spaghetti
Directions
Saute onion, pepper and celery in margarine. Add remaining ingredients except cheese and spaghetti. Simmer 20 minutes. Spoon enough of the mixture in an 8 x 11 pan to cover the bottom. Cover with the uncooked spaghetti. Cover with the rest of the meat mixture. Sprinkle with cheese. Cover with foil. Bake at 350 degrees for 45 minutes. Let stand for 15 minutes before serving. (I also brown the meat with the onions and peppers)
Equals 4 servings: 3P, 1 Bread, 2 Veg.
