Grilled Chicken Parmesan Skewers

These are great on the grill or in the oven baked. Metal skewers work best.

Ingredients

  • 1/2 cup mayonnaise
  • 1/3 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 4 chicken breasts, cut into chunks
  • 1/2 cup Italian bread crumbs, finely crushed

Materials

Metal Grilling Skewers

Non-Stick Aluminum  Foil

Directions

  1. Heat grill (or oven to 425F). Combine mayonnaise, cheese, bread crumbs and garlic powder. Spread mayonnaise mixture on chicken breasts, then put onto metal skewers.
  2. Arrange chicken on non-stick foil and grill for approx. 10 minutes (perhaps longer when baking in oven), turning often or until cooked through and lightly browned and tender.

Quick Tip: If you bake these in the oven  use a 9x13 glass casserole dish and hang the skewers from the edges.  The chicken with cook very evenly this way.

    Be sure to make extra because the leftovers are great in a salad or a wrap.
