Grilled Chicken Parmesan Skewers

These versatile kebabs are great on the grill or baked in the oven. Serve with a green salad and you've got a quick and easy kid-pleasing meal!

Ingredients

  • 1/2 cup mayonnaise
  • 1/3 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 4 chicken breasts, cut into chunks
  • 1/2 cup Italian bread crumbs, finely crushed

Materials

Metal Grilling Skewers

Non-Stick Aluminum  Foil

Directions

1. Heat grill (or oven to 425° F). Combine mayonnaise, cheese, bread crumbs and garlic powder. Spread mayonnaise mixture on chicken breasts, then put onto metal skewers.

2. Arrange chicken on non-stick foil and grill for approx. 10 mins (perhaps longer when baking in oven), turning often or until cooked through and lightly browned and tender.

Quick Tip: For the grill metal skewers work best. If you bake these in the oven use a 9x13 glass casserole dish and hang the skewers from the edges. The chicken with cook very evenly this way.

    Be sure to make extra because the leftovers are great in a salad or a wrap.
