Grilled Chicken Parmesan Skewers |
These are great on the grill or in the oven baked. Metal skewers work best.
Ingredients
- 1/2 cup mayonnaise
- 1/3 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 4 chicken breasts, cut into chunks
- 1/2 cup Italian bread crumbs, finely crushed

Directions
- Heat grill (or oven to 425F). Combine mayonnaise, cheese, bread crumbs and garlic powder. Spread mayonnaise mixture on chicken breasts, then put onto metal skewers.
- Arrange chicken on non-stick foil and grill for approx. 10 minutes (perhaps longer when baking in oven), turning often or until cooked through and lightly browned and tender.
Quick Tip: If you bake these in the oven use a 9x13 glass casserole dish and hang the skewers from the edges. The chicken with cook very evenly this way.
