Grilled Fruit Kebabs |
Choose any combination of fresh seasonal fruits to grill on individual bamboo skewers, one for each guest. When in season, strawberries are a marvelous addition. Serve with ice cream.
Ingredients
- 1⁄2 fresh pineapple, peeled and cut into small wedges
- 2 bananas, peeled and cut into 4 pieces
- 3 peaches, peeled and sliced
- 6 plums, halved and pitted
- 3 pears, cut into large pieces
- 2 oranges
- 1⁄2 lemon
- 3⁄4 cup (175 mL) granulated sugar
- 1⁄4 cup (50 mL) dark rum
- 1 tsp (5 mL) ground nutmeg
- Soaked wooden skewers
Directions
1. Combine prepared fruits in large bowl. Remove zest from oranges and lemon and squeeze juice. Combine zest, juice, sugar, rum and nutmeg; stir into fruit mixture. Allow fruit and liquid to blend at room temperature for at least 30 minutes.
2. Drain fruit; reserve liquid. Thread fruit alternately on soaked wooden skewers. Preheat grill on medium; spray with nonstick coating. Place kebabs on grill rack; close lid and grill (use Direct Grilling, page 6) for about 10 minutes; brush occasionally with drained liquid. Turn skewers frequently. Makes 10 to 12 servings.
Tip: To easily peel peaches, lower peaches, a few at a time, into boiling water for about 30 seconds or until skins start to separate from the fruit. Remove and plunge into cold water until cool enough to handle before removing the skin.
Serving Suggestion: Serve with assorted flavors of ice cream.

What could be used instead of Rum.....all suggestions valued :)
