Hot Beans Vegetarian Tacos |
I can't believe it's not beef! Fool your family with these delicious meat-free tacos. Dried TVP is an excellent healthy substitute for ground beef and provides a great source of protein.
Ingredients
- 2 cups dried TVP (textured vegetable protein) chunks or flakes
- 1 small onion, thinly sliced
- 3 cloves garlic, minced
- 1 tablespoon chili powder (or to taste)
- 1 tablespoon ground cumin
- 2 teaspoons ground coriander
- 3 tablespoons soy sauce
- 3 tablespoons olive oil
Directions
1. Preheat oven to 350ºF.
2. In a saucepan, combine the dried TVP with enough water to cover. Over
high heat, bring to a boil. Once boiling, turn off heat and let soak
for a few minutes until the TVP is softened and fully rehydrated.
3. Strain the rehydrated TVP, discarding the cooking water. In a mixing
bowl, combine the TVP with the rest of the ingredients and stir together
until well mixed.
4. Place the seasoned TVP mixture in a deep baking tray and cover with
aluminum foil. Bake for 40 minutes.
5. Once cooked, give it another stir through. Serve in a 6" soft corn
tortilla and top with your favourite salsa and fixings!
