Hungarian Goulash Soup |
This delicious traditional soup is packed full of good stuff and is sure to be a hit with the whole family.
Prep time: 30 mins
Cook time: 21⁄2 to 31⁄2 hrs
Ingredients
2 tsp vegetable oil
8 oz stew beef, cubed
1 tbsp all-purpose flour
2 onions, chopped
2 stalks celery, chopped
1 clove garlic, crushed
3 tbsp paprika
4 cups beef broth
3 carrots, sliced
3 potatoes, diced
2 bay leaves
1⁄4 cup white vinegar
2 tbsp tomato paste
1 tsp dried thyme
1 tsp dried parsley
1⁄2 tsp freshly ground black pepper
1⁄2 tsp Worcestershire sauce
Directions
1. Heat a large saucepan over medium-high heat. Toss beef with flour. Add oil to pan and swirl to coat. Add beef and brown on all sides. Transfer to a plate and set aside.
2. In the same saucepan, sauté onions, celery, garlic and paprika in the fat remaining in the pan for 1 minute.
3. Add broth, stirring well to scrape up any brown bits stuck to bottom of pan.
4. Add browned beef, carrots, potatoes, bay leaves, vinegar, tomato paste, thyme, parsley, pepper and Worcestershire sauce; bring to a boil.
5. Reduce heat, cover and simmer for 2 to 3 hours, until meat is tender.
