Latvian Milk and Dumpling Soup

This recipe has been a family favourite for generations. It is simple to make, has few ingredients, tastes great, and warms you up on a chilly day. It tastes even better reheated the next day and kids can get involved by dropping the dumplings into the soup (supervision may be req'd).

Ingredients

  • 2 eggs mixed with 1/2 cup water
  • 1 1/2 cups flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1 tsp sugar (optional)

Directions

Mix together in a 4 cup bowl until smooth Drop by teaspoonful into simmering milk . Pour into a bowl and top with a pat of butter....It is VERY filling.
