Low Fat Potato Salad |
I am not a fan of eating all those exotic type salads but want to eat low fat. I found this recipe and am hooked. Hope you enjoy it too.
Ingredients
- 3 medium potatoes, cooked, peeled and cubed
- 5 green onions, sliced
- 2 stalks celery, diced
- 6 radishes, sliced (optional)
- 1 teaspoon dill weed
- 1 cup Yogourt Dressing (see below)
- 1 cup diced cucumber
For the Yogourt Dressing
- 1 cup plain lowfat yogurt
- 1/2 teaspoon mustard
- 1/2 teaspoon salt
- 1/2 teaspoon horseradish
- 1/2 teaspoon paprika
- 1 clove garlic, minced
- 2 tablespoons lemon juice or vinegar
- 1 tablespoon minced onion
Directions
Combine the vegetables.
Make the Yogourt Dressing by combining all ingredients and refrigerate.
Add the dill weed to the Yogurt Dressing and mix thoroughly with the salad. Refrigerate (overnight works best) Add the cucumber, toss all together gently and refrigerate for 30 minutes before serving.
