Maple Syrup Cake

A truly Canadian cake!

Ingredients

  • 2 cups cake and pastry flour
  • 1/2 tsp. salt
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 2/3 cup butter
  • 2/3 cup lightly packed brown sugar
  • 2 eggs
  • 1/2 tsp. maple flavouring
  • 3/4 cup buttermilk
  • 1/2 cup maple syrup

Directions

  1. Preheat oven to 350 degrees..
  2. Grease two 8 inch round cake pans - line bottoms with wax paper.
  3. Sift flour, salt, baking powder and baking soda together.
  4. Cream shortening, then add brown sugar and beat until light and fluffy.
  5. Add eggs and beat.
  6. Combine buttermilk and maple syrup.
  7. Stir dry ingredients into creamed mixture alternately with liquid. Make 3 dry and 2 liquid additions. Mix well after each.
  8. Pour into prepared pans. Bake at 350 deg. for 30 to 35 minutes or until cake springs back when lightly touched.

    Is there an icing for this cake? is the Buttermilk/Maple syrup the icing or does it go in the cake?
