Mashed Sweet Potatoes with Cheese |
Not only are sweet potatoes delicious, they're also great for you. Enjoy this side dish as part of your favourite meal. Makes 4 side dish servings.
Ingredients
- 3/4 pound (336 g) sweet potatoes (approximately 1 large)
- 1/4 cup (60 ml) milk
- 1 tablespoon (15 ml) butter
- salt and pepper to taste
- 1/4 teaspoon (1 ml) thyme
- 1 cup (250 ml) cheddar cheese, grated
Directions
1. Peel and cut sweet potatoes into pieces. Boil in same way as regular potatoes.
2. Once cooked, strain and mash potatoes with milk and butter. Season and add half the cheese.
3. Transfer to a greased baking dish. Sprinkle remaining cheese and broil until cheese is golden brown.
