Mediterranean Pie

My mother-in-law gave me this recipe, it tastes sooo good. Hope you like it.

Ingredients

  • 1 onion; medium size minced
  • 1 lg. clove garlic, minced
  • 1 tbsp. butter
  • 1 10 oz bag spinach
  • 8 oz sliced ham (or 2 of the package sandwich ham)
  • 4 eggs beaten
  • 1 pie crust, double
  • 1 cup of mozzarella cheese or cheese preferred, shredded

Directions

Sauté onion and garlic in butter until tender. Cook spinach, drain well and then chop up finely. Mix spinach and onion mixture along with eggs. Line pie plate with dough, then lay ham slices on the pie plate. Cover with cheese then the spinach mixture on top. Reserve small amount of egg to brush on crust top. Seal edges. Slit some areas on top of pie to let breathe when in the oven. Put in oven at 450 degrees for 10 minutes, and then at 350 degrees for an hour or until golden. (put pie on lower rack in oven).Bon apetit!
