Microwave Peanut Brittle

This wonderful treat is quickly becoming a "family tradition" in our house. We have made this peanut brittle the past two years and we are looking forward to making it again (so are all our friends). It is nice to give as a gift in a decorative tin or place around a tray of squares.

Ingredients

  • 1 cup white sugar
  • 1/2 cup clear corn syrup
  • 1 cup peanuts
  • 1 tsp. butter
  • 1 tsp. vanilla
  • 1 tsp. baking soda

Directions

Stir together corn syrup and sugar in a glass bowl. Microwave on high for 4 minutes. Add peanuts, stir and microwave on high again for 3 minutes. Add butter and vanilla, stir and microwave on last time for 3 minutes. Remove from microwave and QUICKLY stir in baking soda. Pour mixture on a lightly greased baking sheet. Let harden and then break into pieces and ENJOY!

I use unsalted peanuts in this recipe and make sure the baking soda is fresh, it needs to "fizz up".
