Mushroom Scalloped Potatoes |
The rich full-bodied flavour and texture of sautéed mushrooms and green onions add pizzazz to this “never fail” version of the classic. Pre-cooked potatoes shorten the cooking time.
Ingredients
Makes 6 servings.
Prep time: 15 mins.
Cooking time: 30-35 mins.
- 2 tbsp (25 mL) butter
- 1 lb (500 g) sliced fresh mushrooms
- 4 large green onions, chopped
- 2 tbsp (25 mL) all-purpose flour
- 2 ¼ cups ( 550 mL) milk
- 4 oz (125 g) cream cheese, cubed
- ¼ tsp (1 mL) nutmeg
- ¼ tsp (1 mL) salt
- ¼ tsp (1 mL) black pepper
- 4 to 6 cooked, peeled potatoes (2 lb/ 1 kg)
- 1 ¼ cups (300 mL) fresh breadcrumbs
- 1 ¼ cups (300 mL) grated cheddar or Swiss cheese
Directions
1. Melt butter in large saucepan over medium heat. Stir in mushrooms and onions; cook, covered until tender, about 5 minutes.
2. Stir in flour. And then gradually stir in milk, cream cheese, nutmeg, salt and pepper. Bring to boil, stirring constantly; cook until smooth and thickened.
3. Pour into greased 8-cup (2 L) baking dish. Cut potatoes into ¼”(6mm) slices and fold into sauce. Sprinkle breadcrumbs and cheese on top.
4. Bake in 350°F (180°C) oven 25 minutes or until hot and bubbly.
Tips:
- For convenience cook potatoes a few days before. Cook potatoes until tender but firm; cover and cool or chill before slicing.
- If potatoes have thin skins do not peel -you'll save time and add nutrition.

i made these, and yes, they are delicious BUT i don't think the cooking time is right! i had them in the oven for a good hour and half and they still aren't cooked. Plus I pre boiled the potatoes!! a very good recipe but the cooking time needs some altering!
