Nancy's Mushroom Soup

This recipe has been adapted to use less butter and no vermouth.

Ingredients

  • 2 tbsps vegetable oil
  • 6 onions chopped
  • 1/2tsp tsp sugar
  • 4 tbsps butter, unsalted
  • 1 lb. mushrooms sliced
  • 1/4 c flour
  • 1 tsp salt
  • pepper to taste
  • 10 ozs low sodium chicken broth (fat skimmed if homemade)
  • 1 1/2c water

Directions

Saute onions in butter and sugar, till golden. Add mushrooms and saute additional few minutes. Add flour, mix well, then add remaining ingredients. Simmer to heat through.

Per serving: 137 Calories; 8g Fat (48% calories from fat); 5g Protein;14g Carbohydrate; 20mg Cholesterol; 1008mg Sodium.
