Oatmeal Chocolate Cake

This cake is light, delicious and easy. You could sprinkle icing sugar on top. I sometimes make cupcakes then pry them open a bit and put in a spoon of raspberry jam, yummy.

Ingredients

  • 1/2 cup margarine
  • 1/2 cup rolled oats
  • 1 1/2 cup brown sugar
  • 4 tbsp. cocoa
  • 1 cup boiling water
  • 2 eggs
  • 1 cup flour
  • 1 tsp. baking soda
  • 1tsp baking powder
  • 1 tsp. vanilla or 1/2 tsp. of almond and 1/2 tsp. peppermint extract

Directions

Pour boiling water over the margarine, oats, brown sugar and cocoa. Beat two eggs and add to the mixture. Add remaining ingredients. Mix. Bake in 9 inch pan at 350 for 30 min, or until centre springs back.
