Old Country - Potato Soup

Here's a great little recipe you will enjoy!

Ingredients

  • 1/4 cup butter
  • 1 leek chopped
  • 1 cup whole milk
  • 6 potatoes

Directions

Melt butter in large heavy pot. Saute chopped leek (include some green for colour) until translucent. Chop potatoes into one inch cubes, add to pot. Cover potatoes with water, boil till soft. Add milk, salt and pepper to taste and heat to almost a boil - do not boil as milk will curdle.
