Peanut Brittle

I make this every Christmas. It's very simple and looks nice on a plate with other sweets.

Ingredients

  • 1 cup white sugar
  • 1/2 cup white corn syrup
  • 1 1/2 cup peanuts
  • 1 teaspoon margarine
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda

Directions

Combine sugar and corn syrup and microwave on high (normal temperature) for 4 minutes. Stir in nuts and microwave for on high again for 3 minutes. Stir in vanilla and margarine and microwave on high one more time for 3 minutes. Quickly stir in baking soda and pour on lightly greased cookie sheet. Let cool at room temperature over night.
*note: you have to do this all very quickly, especially the final step as it hardens quickly.
