Pesto Stuffed Steak

This great recipe is packed with flavour.

Ingredients

  • 2 beef rib-eye steaks 1 1/2 inches thick
  • 1/4 cup pesto
  • 2 tbsp... finely shredded parmesan cheese
  • 1 tbsp... olive or vegetable oil
  • 1/3 cup finely shredded Parmesan cheese

Directions

Heat grill Make a horizontal cut in side of each beef steak, forming a pocket ( do not cut through to the opposite side) Mix pesto and 2 tbsp... of cheese spread evenly on the insides of pockets; press pockets closed, Drizzle oil over beef. Roll beef in 1/3 cup of cheese until well coated.

Cover and grill beef for 12-14 minutes on medium heat for medium doneness, turning once. To serve cut each beef steak into thick strips. Four servings
