Pizza Pockets - Suppertime Survival |
These freeze well, so double the recipe as they disappear fast! Our kids ask for these all the time. Once the dough is made kids can made their own pizza pockets with a little help.
Ingredients
- 1 tbsp (15 ml) cornmeal
- 2 cups (500 ml) shredded part-skim mozzarella cheese
- 1 cup (250 ml) prepared pizza sauce
- 1 cup (250 ml) thinly sliced pepperoni rounds (about 4 oz/125 g)
- 1 recipe Perfect Pizza Dough (below) or package prepared pizza dough
Directions
- Preheat oven to 450° F (230° C). Lightly grease cookie sheet or spray with nonstick cooking spray; dust with cornmeal.
- In bowl, combine mozzarella cheese, pizza sauce and pepperoni. Set aside.
- Divide Perfect Pizza Dough into 8 equal balls; flatten each into 6- to 8-inch (15 to 20 cm) round disk. Top each with 1/8 of the sauce mixture.
- Lightly wet dough around edges; fold in half over filling and seal edges by pressing together well with back of fork. Place on prepared cookie sheet.
- Bake in bottom half of oven for 12 to 15 minutes or until golden brown.
Makes 8 servings.
Per Serving: 341 calories, 16 g protein, 15 g fat, 35 g carbohydrate, 2 g dietary. fibre. Excellent source of niacin, folic acid, vitamin B 12. Good source of thiamin, riboflavin, calcium, iron and zinc. Moderate source of dietary fibre. Food Guide Servings: 2 Grain Products, 1/2 Milk Products. A serving of vegetables and dip or a piece of fruit will round out this meal.
