Pumpkin Cake

Here is a yummy recipe for the season. I remember having this Pumpkin Cake as a snack when we returned from trick or treating.

It was the best way to keep my sister, brother and I from diving into the candy bag as soon as we got home. It is served warm from the oven so it warms you from the inside when it's chilly outside - and it's not too sweet.

Ingredients

  • 1 package yellow cake mix
  • 2 eggs
  • 1/4 cup water
  • 2 tsp. baking soda
  • 1 canned pumpkin
  • 2 tsp pumpkin pie spice

Directions

Preheat oven to 350F. Prepare cake mix according to package directions. Combine cake batter and remaining ingredients in a large mixing bowl. Beat for 4 minutes at medium speed. Spoon batter into a well greased and floured baking pan or funnel pan. Bake 40-45 minutes. Serve warm with whipped cream or ice cream and enjoy!

    What is the size of the can of pumpkin that would be used in this recipe? Any ideas?
