Pumpkin Corn Muffins

A nice tasty snack.

Ingredients

  • 1 c flour
  • 3/4 c cornmeal
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 eggs beaten
  • 1 c pumpkin puree
  • 1/2 c brown sugar
  • 4 tbsp butter melted
  • 1/4 tsp cardamon
  • 1/4 tsp nutmeg

Directions

Preheat oven to 425. Sift dry ingredients together in a large bowl. Beat remaining ingredients together then add to dry. Do not overmix. Spoon into 12 large, or 24 miniature muffin tins. Bake approximately 10 minutes or until toothpick comes out dry.

Per serving: 144 Calories; 5g Fat (30% calories from fat); 3g Protein; 22g Carbohydrate; 40mg Cholesterol; 178mg Sodium.
