Quick Pasta

Experiment with different fresh herbs. You can make this your signature dish!

Ingredients

  • 1 pkg. fresh pasta - I use Linguine or Fettucine
  • 2 Tbsp. butter or olive oil
  • 1 med - large onion or 1/2 large Spanish onion, chopped
  • 2 cloves garlic, minced
  • 3 Roma tomatoes (plum tomatoes), diced
  • fresh chopped parsley to taste (dried parsley also works well)
  • salt and pepper to taste

Directions

Cook pasta according to package directions. Cook onion and garlic in butter until transparent. Add chopped tomatoes, and seasonings and let the mixture cook until softened. Add parsley and heat through. Mix with cooked pasta and serve! Tastes great with parmesan cheese.
