Really Ripping Lentil Soup |
Packed with lots of nutrients.
Ingredients
- 1 medium onion, chopped
- 2 tablespoons of vegetable oil
- 1 clove of garlic, crushed
- 1 cup of carrots, chopped
- 2 sticks of celery, chopped
- 1/2 cup of lentils
- 1 bay leaf
- 1 tablespoon of freshly-chopped parsley
- salt and freshly-ground pepper to taste
- 2 1/4 cups of vegetable stock or water
Directions
Simmer on medium heat until lentils are tender.
