Really Ripping Lentil Soup

Packed with lots of nutrients.

Ingredients

  • 1 medium onion, chopped
  • 2 tablespoons of vegetable oil
  • 1 clove of garlic, crushed
  • 1 cup of carrots, chopped
  • 2 sticks of celery, chopped
  • 1/2 cup of lentils
  • 1 bay leaf
  • 1 tablespoon of freshly-chopped parsley
  • salt and freshly-ground pepper to taste
  • 2 1/4 cups of vegetable stock or water

Directions

Simmer on medium heat until lentils are tender.
