Rice Pilaf with Zucchini |
This simple basmati rice recipe packs a tasty zing with the addition of zucchini, lemon and turmeric.
Yield: Serves 4
Ingredients
- 1 1/4 cups of basmati rice
- 1 small zucchini
- olive oil
- 1/2 tsp of turmeric
- 1 lemon
- salt and pepper
Directions
1. Wash and cut the zucchini into small pieces and place aside.
2. Pre-heat oven to 200ºC/400ºF.
3. Place 1 cup of water on the boil.
4. In a pan, heat olive oil with turmeric at gentle heat for a few seconds.
5. Add the basmati rice, leave to cook for 5 minutes then slowly add boiling water.
6. When the rice has absorbed the water, add the cubes of zucchini and mix together.
7. Add salt and pepper to taste.
8. Fill 4 mini cocottes up to three quarters full with rice and zucchini.
9. Add 3 tablespoons of boiling water and 1 tablespoon of lemon juice to each cocotte.
10. Cover with the lids and place in the oven.
11. Leave the rice to expand in the oven for 25 minutes.
