Scottish Pancakes

I really like the taste of oats in pancakes. They make them a little heavier but the flavour is worth it. I make my pancakes small like little scotch cakes. My kids used to make me put faces on them like tubby toast.

Ingredients

  • 1-1/2 cups oats uncooked
  • 2 cups buttermilk
  • 1/2 cup all-purpose flour
  • 1-1/2 teaspoons sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 whole eggs beaten

Directions

Preheat electric griddle or frying pan to 350 degrees. Mix oats and buttermilk together in a bowl and let stand for 5 minutes. Combine dry ingredients and add to the oat mixture. Add beaten eggs, mixing well.

Spoon onto oiled griddle. Brown first side, then flip once only. Remove from griddle when golden brown. Serves 4.
