Slow Cooker Lemon Chicken |
The secret to this kid friendly dish is lemonade. Be prepared for this to become a family favourite!
Ingredients
- 2 broiler chickens cut up
- 1/4 cup flour
- 1 can frozen lemonade, thawed. Concentrated.
- 1/2 cup water
- 1 tbsp soy sauce
- 3 tbsp brown sugar
- 3 tbsp ketchup
- 1 tbsp vinegar
- 2 tbsp cold water
- 2 tbsp cornstarch
- Hot Rice
Directions
- Combine flour with 1 1/4 tsp salt. Coat chicken thoroughly. Brown pieces on all sides. Transfer to slow cooker.
- Stir together lemonade, water, soy sauce, brown sugar, ketchup, and vinegar. Pour over chicken.
- Cover and cook on high 3-4 hours.
- Remove chicken, pour liquid into sauce pan.
- Blend cold water and cornstarch and stir into hot liquid. Cook until thickened and bubbling.
- Serve with hot rice.

I made this this week. It was VERY overpowering in lemon flavour. I used 8 cut up boneless skinless chicken thighs. All in all it would have had a great flavour and is an easy recipe, it was just much to strong in lemon flavour for anyone in my family. I would suggest using just half can of lemonaide and half can water. I cooked it on low for 8 hours and the chicken was melt in your mouth tender. served over jasmine rice, piping hot!

Sounded great however I would not even try this one, especially for kids. Too much sugar - I would not think it is a good idea to get children used to so much sweetness int heir food. As a parent, should we not try to promote healthier choices?

I agree with the previous comments - we need to have nutritional info and Iwish you would be clearer about things like '2 broiler chickens'. Most of us don't shop at a butcher where you can go in and ask for 2 broiler chickens and he'll know what you mean. Only one supermarket in my area has someone in the meat department that will come out and answer questions - and the store's prices reflect the extra service levels!!The other thing I would like to see is number of servings for your recipes. I can usually guess pretty accurately but the time I was wrong, I was very wrong.

I too, think this seems rather unhealthy and sweet - there is already one 'desert' recipe in the listing to cater to the sweet tooth and I'm so glad that others have written the same comments. I do hope someone from Canadian Parents reads our comments and responds with another lemon chicken recipe that involves REAL lemons!

Ladies,I don't know about you, but I don't need a slow cooker to make healthy veggie recipes. These recipes are simply suggestions for some tasty treats from your slow cooker, you can take'em or leave'em! I'm not really going to use my slow cooker to make mashed potatoes, but I'm also not offended that they have added a recipe for it on the list of things they've sent. As for a recipe that involves real lemons, use them and see how it works.

This recipe sounds yummy. However, you have to realize that it is just a recipe and can be adjusted to your own situation. For instance; get rid of the salt, use Splenda instead of the brown sugar, RealLemon or a real lemon and it's zest, instead of lemonade, use low sodium soy sauce, use whole wheat flour to coat the chicken (or brown without flour) and add veggies to the cooker. There you have it, a much healthier dinner!

Can't wait to try it! Broiler chickens are usually labelled in the meat section. They are cheap, but you have to pull it all apart yourself. My family loves lemon chicken from the Chinese food menu. I'm guessing this is a healthier version than that and I know what I put in to it. Thanks for the recipe!

Couple of questions - once you thicken the sauce, do you pour it over the chicken and if so, can it be frozen as leftovers or does the sauce have to stay separate from the chicken then just use as sauce once you put the chicken on the rice? Would be nice to be able to see serving suggestions.Y
