Slow Cooker Cheater Chicken Cacciatore

A quick easy chicken dish that is great served over rice along side some roasted potatoes.

Ingredients

  • 4-6 Chicken Breasts (frozen or unfrozen)
  • 1-2 Cups hot salsa (or mild/medium if you want)
  • 1 taco seasoning package (low sodium for healthy choice)
  • 2-3 tbsp sour cream (added during the last hour)
  • 2 tsp corn starch (added to the sauce at the end to thicken)

Directions

  1. Add chicken breasts salsa and taco seasoning to slow cooker. Cook on low for 8 hours.
  2. During the last hour of cooking add sour cream and just before serving add cornstarch to thicken sauce.

    Our family loved this recipe! I especially appreciated that it is a recipe that you can throw together in less than 5 minutes- as a busy mom I know that there are days when I don't have time to do a lot of prep work but still want a dinner ready at the end of the day. In my testing I used the 6Qt Crock-pot programmable Versaware Slow Cooker with Saute feature which I really like because when the time is up it automatically turns to the warm setting. We found this recipe a little salty because the frozen chicken was pre-seasoned and the jarred salsa may have been a bit salty to start. Even with that, we loved the recipe. The chicken was tender and the sauce made the dish. We served it with rice and veggies. TEST TWO: I thought it might be a good idea to try this recipe again so in the All-Clad 6.5 Qt Electric Slow Cooker I combined frozen chicken (but this time not pre-seasoned) and a container of salsa that was a bit more natural. The dish turned out amazingly tasty and not as salty. Conclusion: I would make it both ways next time. I like the frozen chicken from M

    We had this tonight for dinner and loved it! I served it over jasmine rice with some garlic cheese bread and toasted multigrain tortilla chips. I'm a big fan of Epicure Selections spices and used their taco seasoning, it's also a little lower in sodium than the packaged mixes. I did slightly defrost my frozen chicken breasts for about 2 mins in the microwave just so I could get the taco seasoning to stick. I would say this was cooked in about 6 hours on low, so it may be suited to a slowcooker that can switch to warm like the 6qt Versaware Pro. Something I will do the next time, is puree the salsa in the blender before I put it in the Slow Cooker, as the kids picked out a lot of the chunks in the salsa sauce. I did use sour cream, but skipped the corn starch. I found the sauce didn't need to be thickened.

    We just had this for dinner and it was a hit-even with the 3 year old. I used a salsa with corn and black beans in it and that was great.

    Made this last night for company. Crossed my fingers and it turned out perfectly! Added a can of corn in for some southwestern appeal. It was the easiest dish I have ever prepared!! Lovely!!

    Has anyone made this without the sour cream, and if so how did it turn out,,, the reciepe sounds great but noone here likes sour cream...
