Our kids love to come home to a tasty treat and slow cooker cupcakes double as a fun school treat too!
Ingredients
- 1 package of your favourite cake mix prepared

6-8 125 ml mason jars or silicone muffin cups (number will be determined by size of slow cooker bottom)

Water
Directions
- Prepare cake mix according to directions.
- Spray mason jars or silicone cups with cooking spray and fill 1/2 way with cake batter. DO NOT OVER FILL!
- Place in the bottom of the slow cooker. Fill crockpot with water until it reaches half way up mason jars.
- Cover and cook on high for 3 hours.
- Remove from slow cooker (carefully as the jars are hot) and cool.
- Cupcakes cooked in silicone cups can be removed easily and iced/decorated. Cupcakes cooked in mason jars can be iced in the jar and served with a spoon.

My kids loved testing this recipe out! We tested both the mason jars and the silicone cups in two separate slow cookers. The mason jar test was done in the Hamilton Beach Stay or Go slow cooker and the silicone cups were done in the Crock-Pot 5gq embossed slow cooker. We did a third test a few days later with the All-Clad 6.5Qt Electric Slow Cooker. So the results: The mason jar cakes were a bit dense and the kids preferred the cupcakes made in the silicone cups. They found them to be lighter and more like a cupcake. We did a combined test in the All-Clad Slow Cooker and found both to be good but this time we reduced the cooking time to 2.5 hours and had the slow cooker turn to warm. Our first test we cooked the full time as specified in the recipe above. I think the key is to test for doneness with a toothpick. If I was to do this again I would pass on the mason jars and just used the silicone cups. ** What do you do with the extra cake batter? We actually divided the package into two so we wouldn't have anything extra! One final point: the instructions specify that you should fill to half full - don't exceed that or the cupcakes will spill over as they cook.

Off to the dollar store to get some cupcake cups. I can have the kids help make them before lunch and they'll be done in time for afternoon snack.
