Slow Cooker Italian Wedding Soup |
My favourite soup of all time and the only way my kids will eat spinach!
Ingredients
Meatballs
1 Pound ground chicken
1/2 Cup breadcrumbs
1 egg
1/2 Teaspoon onion powder
Salt & pepper to taste
Soup
6 Cups chicken broth
1 Cup orzo or any small pasta
1 package of spinach (stems removed)
Shredded parmesan cheese
Directions
To make meatballs combine first 5 ingredients and roll into 1/2 inch balls. Drop balls in a large pot of boiling salted water and simmer for 6 minutes.Pour broth in slow cooker, adding meatballs. Cook on low for 6 to 8 hours or high for 3 hours. Half way through cooking add spinach and pasta.
Drizzle each bowl of soup with parmesan cheese before serving.

This soup is commonly made with any small round shaped pasta but I have made it with bow-tie pasta and broken up spagetti - whatever I have on hand. Store bought chicken broth works well, but making your own from scratch is best, just don't forget to add extra salt.

Can't wait to try this. It sounds good, but just one question: how much spinach is one package of spinach? Would three cups of fresh spinach be too much? I've heard of people putting in too much spinach causing the spinach to overpower the soup...not a good idea with my kids...

I used Pastene Italian breadcrumbs in the meatballs. Making the soup on Thursday. I can't wait.

This should be called "100 tiny meatballs soup"! I'm making it for dinner tonight, I decided to put it on at naptime... I didn't realize it would take 45 minutes to roll the little meatballs! There should be a disclaimer or something... LOL. It better be a hit with everyone or I won't be doing that again!

I was very disappointed in this soup. I made it just like the recipe above and the orzo pasta turned to mush! It would have probably been ok if I would have put it in during the last half hour of cooking but does NOT work well when you put it in for teh whole last half of cooking. SO sad as it was time consuming to roll the meat balls.

Krista, I got this tip from Rachael Ray in making quick meatballs.... After you have mixed all the ingredients, put the meat mixture into a clear plastic bag, cut off the corner and pipe the meat through directly into the soup, cutting it every 1/2 and inch to and inch. Works perfectly and it's easy peasy!

I too was disappointed in this soup, right away the orzo turned to mush. Not a good slow cooker recipe - darn. And we like to leave our food in the pot as we are all coming and going at different times.

Hi, I make a similar soup recipe, but I use store-bought frozen meatballs that I cut into fourths with scissors. I add the pasta the last half hour or so, the smaller the better when it comes to this pasta. I cook it on low for 4-5 hours, put it on at noon for supper. Newer crockpots cook so quickly, I find most recipes at low are done in 5-6 hours instead of 8-9. Hope this helps!

I love Italian wedding soup but hate making meat balls.... so I just fry the meat and toss it in {I often use ground beef, I have also used pork} Season the meat and add some parmesan... No egg Bread cumbs optional just use less
