Souped up Squash |
Dress up the squash.
Ingredients
- 2 cups cooked mushed squash
- 2 1/2 C water
- 1 tbs. Olive Oil (or other Oil) ( or butter)
- 1 cup orange juice
- 1 cup chopped caramelized onion
- 2 cloves pressed garlic
- 1/2 tsp. cumin
- 1/2 tsp. coriander
- 1/2 tsp. cinnamon
- 1/4 tsp. ground pepper
- 1 tsp. ginger powder (or you can use grated fresh ginger, which is much tastier)
- 1/4 tsp. dry mustard
- 1/2 pound chopped mushrooms
Directions
Let cook on low heat till the mushrooms are cooked. Best served with a dollop of yogurt and a dash of cayenne pepper on the top.
