Souped up Squash

Dress up the squash.

Ingredients

  • 2 cups cooked mushed squash
  • 2 1/2 C water
  • 1 tbs. Olive Oil (or other Oil) ( or butter)
  • 1 cup orange juice
  • 1 cup chopped caramelized onion
  • 2 cloves pressed garlic
  • 1/2 tsp. cumin
  • 1/2 tsp. coriander
  • 1/2 tsp. cinnamon
  • 1/4 tsp. ground pepper
  • 1 tsp. ginger powder (or you can use grated fresh ginger, which is much tastier)
  • 1/4 tsp. dry mustard
  • 1/2 pound chopped mushrooms

Directions

Let cook on low heat till the mushrooms are cooked. Best served with a dollop of yogurt and a dash of cayenne pepper on the top.
