Spicy Carrot Cake |
You can frost this cake with white frosting but we chose not to as my children like to eat this as a snack cake.
Ingredients
- 1/3 c boiling water
- 2 c finely shredded carrots (about 4 medium carrots)
- 1 1/4 c sugar
- 2 c flour
- 1 1/4 tsp baking soda
- 1 tsp salt
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- 1 tsp ground cloves
- 1/2 c vegetable oil
- 3 eggs
- 1 tsp vanilla
- 1 cup chopped nuts (optional)
Directions
Heat oven to 350 degrees. Grease and flour oblong pan 13 x 9 x2 inches. Mix all ingredients together on low speed, scraping bowl constantly, 1 minute. Beat on medium speed, scraping bowl occasionally, 2 minutes. Pour into pan. Bake until wooden pick inserted in center comes out clean, 45 to 50 minutes; cool.
