Spicy Shrimp Grilled Cheese |
Shrimp and jalapeños add a spicy twist to a traditional grilled cheese. Makes one serving.

Ingredients
- 2 slices thick crust sourdough bread, approx. 5” X 4” (12.5 cm X 10 cm)
- 1 tbsp (15 mL) canned jalapeño, drained and minced
- 2 slices of Canadian havarti
- 3 whole poached shrimp (21/25), peeled and deveined
- 2 slices low sodium crisp cooked bacon
- 1 ½ tsp (5 mL) fresh cilantro leaves
- Freshly ground pepper to taste
- 1 ½ tbsp (20 mL) softened butter, unsalted
Directions
1. Spread the minced jalapeño onto one side of the sourdough bread.
2. Place one slice of the havarti onto bread.
3. Cut shrimp in half and place on top of the cheese. Layer bacon and cilantro on top of the shrimp.
4. Season the sandwich with pepper and place the remaining slice of havarti onto filling.
5. Place the remaining bread slice on top. Butter outside of sandwich.
6. Preheat small non-stick fry pan over medium-high heat.
7. Place buttered sandwich onto preheated pan and cook until bottom side is golden brown, approximately 3 minutes.
8. Flip sandwich over and grill until golden brown, approximately 3 minutes.
9. Remove sandwich from pan and cut in half.
Suggestions & tips:
Serve with light green salad and a glass of your favourite Sauvignon Blanc. The minced canned jalapeño is optional.
