Stained Glass Cookies

This recipe is simple to make and a beautiful twist on the standard ice-box cookie recipe!

Ingredients

  • 1 cup butter
  • 2/3 cup sugar
  • 3/4 tsp. or less salt
  • 2 tsp. vanilla
  • 3 cup flour
  • 1/3 cup eggs (1-2 eggs and add water to bring up to correct measurement, if needed)

Directions

Cream all but eggs and flour. Add eggs, then flour. Chill dough for several hours if possible. Crush several colours of hard candy (Christmas candy, life-savers, etc.) and set aside. Roll out dough on floured surface and cut at least 1/4-3/8 " thick with cookie cutters. Make a hole in the centre of each cookie and partially fill with crushed candy. Bake at 350 degrees, watching closely until done, about 7-10 minutes!!
