Stewed Lentils |
Fast, nutritious and DELICIOUS!!
Ingredients
- 1/2 c. green lentils, rinsed
- 1/2 c. rice
- 1 - 19 0z. can stewed tomatoes ( Italian style is best)
- 2 c. beef broth
- 1 1/2 tsp. dried basil
- grated cheese
Directions
In large microwaveable bowl, combine lentils, rice, tomatoes, broth, and basil; cover and micro on HIGH for 8 min. Stir, then micro for 20 - 25 min. on MEDIUM or until lentils and rice are tender and most of liquid is absorbed. Let stand covered for 5 min. Season w/salt and pepper to taste. Spoon onto plates and sprinkle w/grated cheese.
