This recipe is a great alternative to deep-fried veggies!
Ingredients
- Assorted vegetables (zucchini, broccoli, cauliflower, mushrooms) cut into bit size pieces
- 2 eggs
- 1 cup of instant potatoes flakes(plain or flavored)
- 1/3 cup parmesan cheese
- 1/2 tsp celery salt
- 1/4 tsp garlic powder
Materials
- Two bowls, one for egg mixture and one for instant potato flakes mixture.
- Parchment paper
- Cookie sheet
Directions
- Combine potato flakes, parmesan cheese, celery salt and garlic salt.
- In a separate bowl, combine eggs and beat with fork.
- Dip veggies and roll in
mixture.
- Bake at 400 degrees F for 20-25 minutes.
- Serve with your choice of dip. (Ranch or Dill is my favorite).
