Tater Dipped Veggies

This recipe is a great alternative to deep-fried veggies!

Ingredients

  • Assorted vegetables (zucchini, broccoli, cauliflower, mushrooms) cut into bit size pieces
  • 2 eggs
  • 1 cup of instant potatoes flakes(plain or flavored)
  • 1/3 cup parmesan cheese
  • 1/2 tsp celery salt
  • 1/4 tsp garlic powder

Materials

  • Two bowls, one for egg mixture and one for instant potato flakes mixture.
  • Parchment paper
  • Cookie sheet

Directions

  1. Combine potato flakes, parmesan cheese, celery salt and garlic salt.
  2. In a separate bowl, combine eggs and beat with fork.
  3. Dip veggies and roll in mixture.
  4. Bake at 400 degrees F for 20-25 minutes.
  5. Serve with your choice of dip. (Ranch or Dill is my favorite).
