Thimble Cookies

This is one of my favourite Christmas recipes!

Ingredients

  • 1/2 cup butter
  • 1/4 cup granulated sugar
  • 1 egg separated
  • 1 tsp vanilla
  • 1 cup all-purpose flour
  • 1 cup finely chopped walnuts
  • Raspberry Jam (or halved candied cherries)

Directions

  1. In large bowl, cream together butter and sugar until light and fluffy, beat in egg yolk and vanilla. Gradually add flour to creamed mixture. Cover and let chill for 30 minutes.
  2. Shape dough into 1-inch balls.
  3. Dip in lightly beaten egg white; roll in walnuts.
  4. Place on greased cookie sheet.
  5. Using finger or greased thimble make indentation in centre of each ball.
  6. Bake at 325f for 7 minutes.
  7. Make indentations once more.
  8. Bake for 10 minutes longer or until set.
  9. Let cool on racks.
  10. Place a spoonful of jam (or a half candied cherry) in each indentation.
  11. Makes about 2 dozen cookies

    My mom used to make these cookies for Christmas my whole life . I want to pass on the tradition to my family. She new they were my favorite so when she knew I was coming for Christmas, she would bake a whole lot of them and freeze them so I could take out as many as I wanted and take some when I went home. I miss this simple delight as it reminds of her love for me.
