Tomato and Peach Gazpacho |
Our family loves this recipe because it combines so many great tastes. We add peaches to the soup to add a bit of sweetness to satisfy the younger children at the table. This is a great recipe when you have so many tomatoes you don't know what to do with them but you can also make it in the winter for a change from hot soup. Brings you back to summer if you use tomatoes you put in jars or froze ahead.
Ingredients
- 5 large ripe tomatoes, peeled, seeded and chopped
- 1 yellow bell pepper, seeded and chopped
- 1 medium cucumber, peeled, seeded and chopped
- 1 medium red onion, coarsely chopped
- 2 large garlic cloves, minced
- 2 medium peaches, peeled and chopped
- 1/4 cup red wine vinegar
- 1/4 cup lime juice
- 1 cup Tomato juice or Clamato juice
- 2 Tbsp extra virgin olive oil
- 1/2 tsp hot sauce
- 1 tsp salt
- pepper to taste
Directions
Combine the tomatoes, pepper, cucumber, onion, garlic and peaches. Blend until smooth in a blender or food processor.
Add remaining ingredients to combine. Pour into dish, cover and chill overnight.
Serve in chilled bowls.
