Veggie Melt |
Put a spin on veggie sandwiches with this parent‑ and kid-approved variation. Makes 2 portions.
Ingredients
- 2 English muffins or 4 slices of multi-grain bread
- 2 Tbsp. mayonnaise-type dressing
- 1/4 cup of corn, fresh or canned
- 1/4 cup chopped cucumber
- 1/4 cup chopped tomato
- 2 Tbsp. chopped green onion (optional)
- 2 1-oz slices of low-fat Swiss or cheddar cheese
Directions
1. Toast bread, spread with mayonnaise and vegetable mix.
2. Top off with slices of cheese and broil in the oven until cheese is melted.
