Watermelon Pop

There's nothing quite like the taste of a piece of sweet, juicy watermelon on a hot summer day. The next time you serve up this favourite summertime treat, surprise the kids with some watermelon pops.  This recipe is quick and easy and a perfect treat to cool the kids down.

Ingredients

  • 1/8 large watermelon
  • 4 tbsp fresh lime juice
  • 1 tbsp sugar, or honey

Directions

Remove rind and seeds from watermelon. Chop into small chunks and put in blender. Blend until watery and then add fresh lime juice and sugar or honey.
Pour into small paper paper cups or popscicle molds if you have them leaving space at the top so they don't overflow. Stick a wooden popsicle stick into each cup. Freeze overnight and enjoy the next day.
