White Beans All’uccelletto |
Serve this tasty protein-packed bean salad as part of a healthy lunch. Makes a perfect addition to a picnic! Makes 4 servings.
Ingredients
- 3 tbsp/45 mL olive oil\
- 2 cloves garlic, minced
- 1 tbsp/15 mL chopped sage
- ½ cup/125 mL diced tomatoes, peeled and seeded
- 2 cups/500 mL cooked cannellini beans
- Salt and pepper
Directions
1. Heat the oil in a saucepan over medium-high heat. Sauté the garlic and sage just until the garlic begins to brown.
2. Add the tomatoes, then reduce the heat to medium and simmer for 10 minutes.
3. Stir in the beans, reduce heat to low, and cook slowly for 10 minutes. Season to taste with salt and pepper.
