Wholesome Mashed Potatoes

Great way to get extra veggies into kids.

Ingredients

  • 2 lbs. table potatoes, peeled and quartered
  • 1/2 head of cauliflower, broken up into pieces
  • 4 cloves garlic, peeled
  • 2 large carrots, peeled and cut up into small pieces
  • 2 tbsp. margarine
  • 1/4 cup 1% milk
  • salt & pepper to taste

Directions

Place vegetables into large pot of boiling, salted water and boil for 20 minutes or until vegetables are cooked. Drain. Mash well with margarine, milk and salt and pepper.

    My mom use to make this when we were kids, only she would use carrots and turnip, we just loved it. Now I do the same for my kids only I just do it with carrots and or brocolli
